The vineyards, over 100 years old, are planted in poor clay-limestone soil, which encourages low yields but high concentration in the fruit. The estate practices organic and regenerative viticulture, enhancing biodiversity and soil health.
The winemaking process involves minimal intervention, allowing the grapes to express their natural characteristics. Fermentation occurs at low temperatures to preserve the fruit's freshness. The wine is aged for six months in 500-liter oak barrels and amphorae, ensuring a balance between tradition and the pure essence of the grapes.
