A western rift on a Junmai
Brooklyn Kura combines traditional sake brewing with American craft techniques to create a unique dry-hopped sake.
Brooklyn Kura, located in Brooklyn, New York, was founded to blend a thousand years of sake brewing tradition with American creativity. As the first sake brewery in New York, it focuses on junmai styles, using only four ingredients: water, rice, koji, and yeast. The name 'Occidental' reflects its American perspective on craft sake.
Occidental is a single yeast junmai, made from Calrose rice sourced from California. The sake undergoes a unique process where it is dry-hopped with Citra hops post fermentation to enhance its aroma. This sake is pasteurized once after bottling and has a rice milling rate of 50%.
