This wine offers aromas of preserved lemons, stewed apple, and subtle herbs with a saline finish.

The nose presents preserved lemons, subtle herbs, and stewed apple. Aniseed fennel and almond-cherry Bakewell add complexity to the palate. The wine is medium- to full-bodied with a gentle phenolic texture.

It has crisp, high acidity that enhances the overall freshness. The finish is marked by a lovely saline thread, making it a refreshing choice. Serve chilled.

Can Sumoi is an agricultural estate established in 1645, located in the Montmell massif of Catalunya. The estate spans 400 hectares and sits at an elevation of 600 meters, where the climate and soil contribute to the distinctiveness of its wines. The focus is on recovering ancestral traditions while practicing organic agriculture, which enhances biodiversity and the local ecosystem.

The Xarel-lo grapes are sourced from old vines planted in shallow, sandy soils at 300 to 400 meters above sea level. The winemaking process involves minimal intervention, with fermentation occurring in both cement and stainless steel tanks. The wine undergoes spontaneous malolactic fermentation and is aged on its lees for four months, with very low sulfur additions at bottling.
