The Rosso di Montalcino undergoes red vinification with a maceration period of about 10 days. This medium maceration helps achieve a balanced relationship between aroma and structure. After fermentation at temperatures between 78-82°F, the wine ages in stainless steel for 7-8 months before bottling.
